Stock Bisque 是 …

Bisque 一字源自法文,是指一般用貝類海鮮調製的奶油濃湯,bisque 的經典例子是Lobster Bisque (龍蝦濃湯)。Lobster Bisque做法是把龍蝦起肉,把龍蝦殼跟配料炒香加入水熬到湯色呈現金黃色(註1),最後把湯汁加以調味,加入鮮奶油(cream)、原先的龍蝦肉便完成(註2)。現在蔬菜或其它肉類熬成的濃湯也可以稱為bisque。簡單來說bisque 就是soup(湯)的其中一類。Stock soup 即使中文的高湯,但Stock Bisque這裡是指股市濃湯,美味的奶油湯令人回味無窮,同樣地股市奶油湯希望能帶出美好的投資回報。 註1: Bisque 一字描述颜色时是指乳黄色(a pink to yellowish tan color) 註2: 龍蝦濃湯詳細做法可參考http://www.videojug.com/film/how-to-make-lobster-bisque 註3: Bisque 的美式發音: http://www.macmillandictionary.com/pronunciation/american/bisque Advertisements
